Elitia, from AV Bodeguers, wine is made 100% from Carignan (locally known as Samso) from very old vines in two small parcels in Vilamaniscle. The 90-year-old vines grow on mineral-rich slate soils at an altitude of 200 to 250 meters and are cultivated using bush training with extremely low yields (about 500 kg/ha). The vineyards are organically certified, and the grapes are hand-harvested and selected in the vineyard. Each parcel is harvested separately at optimal ripeness.
The wine then matures for 12–14 months in French oak barrels (225–300 L), followed by at least 12 months of bottle aging. The unfiltered wine shows aromas of figs, dark cherries, blackberries, vanilla, cloves, and black pepper, with a long, pleasant finish.
