Elitia Garnatxa d'Empordà
100% White Grenache from vines over 80 years old. Annual production of around 250–300 bottles of 37.5 cl, all individually numbered.
Harvesting is manual in 20 kg boxes. Passerillage (over-ripening in the vineyard) takes place until the first week of October.
Skin maceration lasts 24–48 hours. After racking, spontaneous fermentation begins. At 7% alcohol, fermentation is stopped by chilling and fortification with wine alcohol until reaching 15.5%. No sulfites are added during the entire process.
Aging takes place with 50% of the wine in demijohns for 24 months under the sun and open air, and 50% in a 14-year-old solera that already contains 4 vintages. The final blend usually consists of 50% from demijohns and 50% from solera.
Tasting notes
Amber color. Notes of nuts, flowers, honey, citrus, and stewed fruit. Unctuous on the palate with a fresh, sweet finish.
